1/4 cup olive oil (divided use)
1 1/2 lbs. boneless sea bass fillets or other firm white fish such as cod
1/2 cup dry white wine
2 garlic cloves, minced
1 Tbsp. fresh minced oregano or thyme
pinch crushed red pepper flakes
Kosher salt and freshly ground black pepper to taste


  1. Preheat the oven to 425°F. Coat a large baking pan with about 1 tsp. of the olive oil. Arrange the fish fillets in a single layer in the pan. Brush some of the olive oil over all the fillets.
  2. Combine the remaining olive oil, wine, garlic, oregano or thyme, red pepper flakes, salt, and pepper. Mix well. Pour over the fish fillets.
  3. Roast the fish for about 10 minutes, or until cooked through and opaque. Remove from the pan; pour pan juices over the fish. Drizzle with additional olive oil as desired.
