1 cup amaranth
2 cups water
1 cup unsweetened apple juice
1/2 cup raisins
1/4 cup chopped walnuts
1 Tbsp. honey
1 cinnamon stick
1 tsp. lemon juice


  1. Combine the amaranth and water in a saucepan, and bring to a boil. Lower the heat, and simmer for 20 minutes.
  2. Add the cooked amaranth to another saucepan. Add the apple juice, raisins, walnuts, honey, cinnamon stick, and lemon juice, and bring to a boil. Lower the heat, and simmer uncovered for 15 to 18 minutes. Remove the cinnamon stick, and serve in individual dishes.
Note: The texture of cooked amaranth is sticky and somewhat gummy. This is the correct consistency. Amaranth can be found in natural-food stores and from online sources. It is a wonderful source of protein and a nice change from oatmeal. Amaranth can often be used interchangeably with quinoa in sweet and savory dishes.
