Ingredients

Salad
2 med. red tomatoes, cut into 1 inch cubes (2 cups)
2 med. yellow tomatoes, cut into 1 inch cubes (2 cups)
1 cup halved cherry tomatoes
1/2 cup chopped fresh basil
1/2 med. red onion, thinly sliced (1 cup)
1 Tbsp. capers, drained and chopped
Vinaigrette
2 Tbsp. balsamic vinegar
1 Tbsp. fresh lemon juice
1 tsp. dijon mustard
1 garlic clove, finely minced
1/4 tsp. sugar
sea salt and freshly ground black pepper to taste
1/4cupolive oil

Directions

  1. Combine all the salad ingredients in a large bowl.
  2. In a small bowl, whisk together the balsamic vinegar, lemon juice, dijon mustard, garlic, sugar, salt, and pepper. In a thin stream, slowly whisk in the olive oil.
  3. Pour the vinaigrette over the tomato salad, and let the salad stand at room temperature for 30 minutes before serving.
