Ingredients
2 | lbs. | celery root or celeriac |
2 | cloves garlic | |
1/2 | tsp. | fine sea salt |
1/4 | tsp. | freshly ground black pepper |
1/2 | cup | skim milk |
1/4 | cup | chopped flat Italian parsley |
Directions
- Cut the celery root into quarters or eighths and peel. Place celery root, garlic, salt, and pepper in a 4-quart saucepan and cover with water. Bring to a boil and cook until tender, about 15 minutes.
- When celery root is done, drain and mash with a large fork or potato masher. Stir in the milk and parsley.
