Ingredients

2 lbs. celery root or celeriac
2 cloves garlic
1/2 tsp. fine sea salt
1/4 tsp. freshly ground black pepper
1/2 cup skim milk
1/4 cup chopped flat Italian parsley

Directions

  1. Cut the celery root into quarters or eighths and peel. Place celery root, garlic, salt, and pepper in a 4-quart saucepan and cover with water. Bring to a boil and cook until tender, about 15 minutes.
  2. When celery root is done, drain and mash with a large fork or potato masher. Stir in the milk and parsley.
