4 small cucumbers, peeled, seeded,
and grated (1 cup)
2 cups plain, nonfat Greek-style yogurt
2 Tbsp. fresh lemon juice
1/2 cup chopped fresh mint
1/2 cup chopped fresh dill
1 garlic clove, minced (1 tsp.)
1 Tbsp. olive oil
Sea salt and freshly ground black pepper to taste
2 Tbsp. fresh dill, minced


Add all the ingredients to a food processor or blender. Puree for 60 seconds, or until smooth. Pour the soup into a container, and refrigerate for 3 to 4 hours. Garnish each bowl of soup with minced dill and serve.
