Ingredients

3 Tbsp. olive oil
2 Tbsp. low-fat, reduced-sodium chicken broth
4 to 5 garlic cloves, coarsely chopped
1/4 cup grated fresh Parmesan cheese
2 Tbsp. toasted pine nuts
3/4 cup torn basil leaves
Sea salt and freshly ground black pepper to taste

Directions

In a food processor, add the oil, broth, garlic, cheese, and pine nuts. Puree completely. Add in the basil, and puree again. (By waiting until the end of the processing to add the basil, you should get a rich green pesto rather than a dull brown one.) Season well with salt and pepper.
