Ingredients

1 Tbsp. olive oil
4 garlic cloves, minced
1/4 tsp. crushed red pepper
1/2 cup rehydrated sliced sun-dried tomatoes
1/2 cup pasta water (reserve this after the pasta has been cooked and drained)
2 Tbsp. grated fresh Parmesan cheese
1/2 cup low-fat ricotta cheese (such as Figro)
1/3 cup reduced-fat goat cheese
2 Tbsp. diced prosciutto
2 Tbsp. minced parsley
Kosher salt and fresh-ground black pepper to taste

Directions

  1. Heat the oil over medium-high heat in a large skillet. Add the garlic, crushed red pepper, sun-dried tomatoes, and pasta water. Cover and cook for 5 minutes.
  2. Add the Parmesan, ricotta, goat cheese, and prosciutto to a large bowl. Add in the garlic-tomato mixture. Add the parsley, and season with salt and pepper. Toss with cooked pasta.*
