A New Cookbook Makes Meal Planning Easy


Creating a week of meals that are both healthy and delicious is no small task. A new book from the American Diabetes Association aims to make this process a whole lot easier. The Month of Meals Diabetes Meal Planner offers interchangeable menu options—some simple and some adventurous—for dozens of different breakfasts, lunches, dinners, and snacks, all complete with nutrition information. Here, for example, is a lunch recipe for a macaroni salad to be served with a sliced kiwi and two pecan halves:

Macaroni Salad
1 serving
Serving size: 1 cup

2/3 cup cooked macaroni
1 1/2 oz. fat-free mozzarella cheese cubes
2 Tbsp. chopped green pepper
2 Tbsp. chopped carrots
2 Tbsp. chopped onion
1 Tbsp. reduced-fat mayonnaise
1 Tbsp. plain fat-free yogurt

Chill the cooked macaroni for 1 to 2 hours. Combine the remaining ingredients and mix them into the macaroni.
