Ingredients

16 semisweet chocolate chips
2 tsp. light coffee ice cream
1 tsp. chocolate syrup

Directions

  1. Place the chocolate chips in a small glass bowl, uncovered, and microwave at 50% power for 30 seconds. Remove the bowl, and stir the chocolate for 10 seconds. Continue to microwave at 50% power for 30 seconds. Stir the chocolate until it is completely melted.
  2. Using the back of a teaspoon or a small spatula, coat the sides and bottom of a small or mini silver foil paper baking cup with chocolate.
  3. Place the cup in the refrigerator, and chill until the chocolate shell hardens, approximately 30 to 45 minutes.
  4. Once the shell is hardened, scoop the coffee ice cream into the shell. Drizzle with chocolate syrup and serve immediately.
