12 wooden skewers
Basting Sauce
1/2 cup unsweetened pineapple juice
1 Tbsp. brown sugar
juice of 1 lime
Spice Mixture
1/2 tsp. cinnamon
1/2 tsp. allspice
pinch cloves
1 med. pineapple, peeled, eyes removed, cored, and cut into 1-inch cubes (3 cups)
2 med. mangoes, peeled and cut into 1-inch cubes (2 cups) fruits, peeled and cut into 1-inch cubes (1 cup)


  1. Soak the wooden skewers in a shallow pan with hot water to cover. Set aside for 1 hour or more.
  2. Prepare an outdoor grill. Coat a grill rack with cooking spray, and heat the grill to medium.
  3. Combine all the ingredients for the basting sauce and add to a shallow bowl.
  4. Combine the ingredients for the spice mixture.
  5. Remove the skewers from the water. Using two skewers for each kebab, thread the fruit, alternating the types, onto the skewers. Thread the fruit through each cube, keeping the fruit flat to prevent it from spinning on the skewer while grilling. Sprinkle the kebabs lightly with the spice mixture.
  6. Put the kebabs on the grill, and using a basting brush, coat the fruit with some of the sauce. Grill the fruit until it softens and browns, about 10 minutes. Lightly baste the skewers every few minutes, taking care not to burn the fruit. Drizzle the kebabs with any basting sauce that remains. Serve immediately.
