Ingredients

1/3 cup uncooked arborio rice
1 2/3 cups 1% milk
1 1/2 Tbsp. sugar
1 1/2 Tbsp. finely diced dried figs
1/8 tsp. vanilla extract
Cinnamon for garnish

Directions

In a heavy pan, combine the rice, milk, and sugar. Bring to a gentle boil over high heat. Proceed with step 1 as above, cooking the rice for 20 to 25 minutes. If serving the pudding cold, stop cooking sooner, when the pudding is a bit runny. Follow steps 2, 3, and 4 from this recipe.
