4 red bell peppers
1 lb. sole fillet
1 tsp. extra virgin olive oil
1 large clove garlic, minced
1/4 tsp. fine sea salt
1/8 tsp. freshly ground black pepper


  1. Place the whole peppers directly on a grill, gas burner, or under your broiler. Roast until the peppers are completely blackened on the outside. Place in a bowl and cover tightly with plastic wrap for at least 15 minutes. Once cooled, you can peel away the blackened skin.
  2. Place the roasted pepper in a food processor and puree until fine.
  3. Mix the extra virgin olive oil with the garlic, salt, and pepper. Spread on one side of the fish and broil until golden. Serve with the pureed roasted red peppers.
