Ingredients

1/4 cup light mayonnaise
1/4 tsp. ground chipotle pepper
1 (6 oz.) can crushed pineapple
1/2 cup chopped cilantro, or flat Italian parsley
2 cups packaged coleslaw mix
Cooking spray
1 lb. flounder fillet

Directions

  1. Mix the mayonnaise and chipotle pepper together in a large bowl. Add the pineapple with juice and cilantro. Mix well. Add the coleslaw and mix well.
  2. Preheat the broiler. Spray a foil pan with cooking spray, and place the fish in the pan. Spray fish with cooking spray. Place under the broiler for 3 to 5 minutes, until the fish is flaky.
  3. Serve with the tropical slaw mix.
