2 cups dry white wine (sauvignon blanc or pinot grigio)
4 sprigs fresh rosemary (additional rosemary for garnish, optional)
1/4 tsp. fine sea salt
1/4 tsp. freshly ground black pepper
2 fresh lemons, sliced (divided use)
1 lb. arctic char fillet, skin removed


  1. Place the wine, rosemary, salt, a few grinds of black pepper, and slices of one lemon in a sauté pan.
  2. Add fish, bring to a low boil, cover, and simmer until the fish is done, approximately 10 minutes.
  3. Serve with additional lemon slices and sprigs of rosemary.
