Ingredients
2 | cups | dry white wine (sauvignon blanc or pinot grigio) |
4 | sprigs | fresh rosemary (additional rosemary for garnish, optional) |
1/4 | tsp. | fine sea salt |
1/4 | tsp. | freshly ground black pepper |
2 | fresh lemons, sliced (divided use) | |
1 | lb. | arctic char fillet, skin removed |
Directions
- Place the wine, rosemary, salt, a few grinds of black pepper, and slices of one lemon in a sauté pan.
- Add fish, bring to a low boil, cover, and simmer until the fish is done, approximately 10 minutes.
- Serve with additional lemon slices and sprigs of rosemary.
