4 cups thinly sliced romaine lettuce
2 carrots, peeled and diced
2 celery stalks, diced
2 plum tomatoes, seeded and diced
1/2 cup diced red pepper
1/2 cup diced yellow pepper
1/2 cup peeled and diced cucumber
1/2 cup canned black beans, drained
2 Tbsp. cider vinegar
2 Tbsp. fresh lime juice
2 Tbsp. chopped cilantro
2 tsp. honey
1 tsp. salt
1/4tsp.black pepper
1/4cupolive oil
1/4cuptoasted pumpkin seeds


  1. Place the lettuce on a shallow platter. In rows, arrange the carrots, celery, tomatoes, red and yellow peppers, cucumber, and beans over the lettuce.
  2. Whisk together the cider vinegar, lime juice, cilantro, honey, salt, and pepper. Drizzle in the oil, whisking it in.
  3. Drizzle dressing over the salad. Top with the seed
