Ingredients

1 lb. baby carrots
1 lb. sugar snap peas
1 Tbsp. olive oil
2 large shallots, sliced
11/2 tsp. minced fresh thyme
Kosher salt and fresh-ground
black pepper to taste
1/2 tsp. fresh lemon zest
(optional, not included in nutritional analysis)

Directions

  1. In a large skillet over high heat, bring 1 inch of lightly salted water to a boil. Add the carrots, and cook for 5 minutes. Add the snap peas, cover, and cook for 2 minutes. Drain, remove carrots and peas, and set aside. Wipe out the skillet.
  2. Add the olive oil to the pan, add the shallots, and sauté for 5 minutes. Add in the fresh thyme, and cook for 2 minutes. Stir in the carrots, snap peas, salt, and pepper. Cook for 1 to 2 minutes, until heated through. Garnish with lemon zest, if desired.
