3 cups old-fashioned rolled oats (not instant)
3 Tbsp. chopped walnuts
1/2 tsp. ground cinnamon
1/4 tsp. salt
2 Tbsp. honey
1 Tbsp. canola oil
1 Tbsp. apple juice
1/4 cup dried cherries, chopped

  1. Preheat the oven to 300°F. In a large bowl, combine the oats, walnuts, cinnamon, and salt.
  2. In a small saucepan, combine the honey, oil, and apple juice, and cook over low heat for 1 to 2 minutes. Add the honey-oil mixture to the oats. Mix well.
  3. Spread the mixture in one layer on a baking sheet lined with parchment paper. Bake the granola for 20 to 25 minutes or until golden brown. Remove the granola from the oven and let cool.
  4. Stir in the dried cherries, and put in an airtight container. The granola can be stored in a cool, dry place for about 1 week.
Note: This granola does not form clusters.
