Ingredients

1 Tbsp. olive oil
2 med. green bell peppers, cut into 1-inch squares
2 med. red bell peppers, cut into 1-inch squares
2 Tbsp. water
Fresh-ground pepper
1/2 tsp. dried basil
2 cups hot precooked rice

Directions

  1. Heat oil in a large skillet over medium heat. Add peppers, and sauté for 3 to 5 minutes, stirring frequently.
  2. Add water and pepper; continue sautéing for 4 to 5 minutes or until peppers are just tender. Stir in basil, and remove from heat.
  3. Spread rice over a serving platter, spoon peppers and liquid on top, and serve.
