Ingredients

Taco Seasoning Mix
1 tsp. olive oil
1/2 cup minced onion
1 lb. 93% lean ground beef
3/4 cup water
10 (6-inch) corn tortillas
Olive oil cooking spray
1 cup shredded romaine lettuce
1/2 cup nonfat sour cream or
nonfat Greek-style yogurt
Pico de Gallo
Guacamole

Directions

  1. Prepare the taco seasoning in a small bowl. Set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion, and sauté for 2 minutes. Add in the ground beef or chicken, and sauté about 7 minutes, breaking up the meat until cooked through. Drain off any accumulated fat.
  3. Add in the taco seasoning mix and water, and bring to a rapid simmer on high heat. Reduce heat to low, and cook for about 10 minutes until water is absorbed.
  4. Prepare the tortillas: Coat a small skillet with cooking spray on medium heat. Add a tortilla to the pan, and cook on one side for about 1 minute. Using tongs, turn the tortilla over and cook for another minute. Put aside, then repeat with remaining tortillas. Wrap the tortillas in foil and keep warm until ready to make tacos.
  5. Assemble the tacos: Place the tortillas on a flat work surface. Divide the meat mixture among all the tortillas. Fold over to form a taco. Top with shredded lettuce and sour cream or yogurt, and serve with pico de gallo (about 2 Tbsp. per taco) and guacamole (1 Tbsp. per taco).
