Ingredients

Marinade
1/4 cup light soy sauce
1 tsp. peeled and grated fresh ginger
1 garlic clove, minced
1 Tbsp. canola oil
1 Tbsp. honey
1 lb. large fresh or frozen peeled and deveined shrimp (if using frozen, defrost and pat dry)

Directions

  1. Preheat the oven to 500ºF. Combine the marinade ingredients in a bowl. Add the shrimp and let marinate for 5 minutes.
  2. On a large baking sheet, add the shrimp in a single layer with some space in between each one. This will allow the shrimp to roast rather than steam. Discard any leftover marinade.
  3. Roast the shrimp for about 7 minutes or until they turn pink and are cooked through.
  4. Serve the shrimp over a salad, warm or at room temperature.
