Seasoning mixture
2 tsp. garlic powder
2 tsp. onion powder
1/2 tsp. dried basil
1/2 tsp. dried oregano
1/2 tsp. paprika
1/2 tsp. sugar
1/2 tsp. kosher salt
1/8 tsp. fresh-ground black pepper
1 (16 oz.) bag frozen shelled edamame
1 Tbsp. olive oil


  1. Preheat the oven to 400ºF.
  2. In a bowl, combine the seasoning mixture. Set aside.
  3. Cook the edamame according to package directions on the stove for about 5 to 7 minutes. Drain well and pat dry.
  4. In a large bowl, toss the edamame with the olive oil. Add in the seasoning mixture, and toss again.
  5. Spread the edamame in a single layer on a large nonstick baking sheet. Roast the edamame for about 45 minutes to 1 hour until it is dry to the touch and crunchy. Remove from the oven.
  6. Store the edamame in a glass container for up to 3 or 4 days, either at room temperature or in the refrigerator.
