Ingredients
1 | cup | all-purpose flour |
1/4 | cup | whole wheat pastry flour |
1/2 | tsp. | ground ginger |
1/2 | tsp. | baking soda |
1/4 | tsp. | salt |
1/2 | cup | Splenda Sugar Blend |
1/2 | cup | low-fat buttermilk |
1/4 | cup | unsweetened applesauce |
1/4 | cup | molasses |
1/4 | cup | canola oil |
1 | egg, beaten | |
2 | Tbsp. | finely minced crystallized ginger |
1 | tsp. | finely grated fresh ginger |
1 1/2 | Tbsp. | powdered sugar |
Directions
- Preheat the oven to 350ºF. Coat a 9-inch baking pan with cooking spray. In a large bowl, combine the flours, ground ginger, baking soda, and salt.
- In another bowl, combine the Splenda with the buttermilk, applesauce, molasses, oil, egg, crystallized ginger, and fresh ginger.
- Slowly stir in the flour mixture, and mix to combine.
- Pour the batter into the prepared pan, and bake for 25 minutes until a toothpick inserted into the gingerbread comes out clean. Cool in the pan. Sprinkle with powdered sugar, and cut into 25 squares.
