Ingredients
1 | cup | whole-grain brown rice |
1 | cup | shelled edamame (green soybeans) |
1 | onion, chopped | |
1 | red bell pepper, chopped | |
1/2 | cup | chopped green onions |
3 | Tbsp. | coarsely chopped walnuts, toasted |
Salt and pepper to taste (optional) |
Directions
- In separate saucepots, cook the rice and the edamame according to package directions, omitting any oil and salt.
- In a large nonstick skillet coated with nonstick cooking spray, sauté the onions, red pepper, and green onions over medium heat for 5 minutes or until tender.
- Combine all ingredients in a serving bowl.
