2 | tsp. | chili powder |
1 | Tbsp. | brown sugar |
1 | tsp. | Kosher salt |
1 | tsp. | cinnamon |
1/2 | tsp. | cayenne pepper |
1 | tsp. | fresh ground pepper |
1 1/2 | lb. | salmon fillets |
Tropical Salsa | ||
2 | small | ripe mangoes (approx. 11 oz. each) or 1 large papaya, peeled and diced |
1 | cup | diced fresh pineapple |
1/2 | small | red onion, diced |
1/4 | cup | minced cilantro or parsley |
3 | Tbsp. | fresh lime juice |
1 | tsp. | sugar |
Salt to taste |
Directions
Rub
- Preheat oven to 400°F. Combine all rub ingredients and spread over both sides of the salmon. You may have leftover rub.
- Line a broiler pan or baking sheet with foil and coat with cooking spray; place the salmon fillets on the pan. Roast the salmon for about 10 minutes. Turn the oven to broil. Broil for 2 minutes to give the salmon a golden color. Serve with a side of the salsa.
Tropical Salsa
Combine all ingredients in a bowl, cover, and refrigerate for 30 minutes.
