Ingredients

1 | garlic clove, minced | |
1/2 | cup | diced green pepper |
1/2 | cup | diced onion |
1/2 | cup | diced celery |
1 | lb. | low-fat Italian turkey sausage, cooked, casing removed, and sliced |
1 | tsp. | dried oregano |
1 | tsp. | dried thyme |
1 | tsp. | dried basil |
1 | (14-oz.) can diced, no-salt-added Italian-style tomatoes in their juice | |
1 | (15.5-oz.) can cannellini beans (or other white beans), drained |
Directions
- Heat the oil in a large nonstick skillet over medium-high heat. Add the garlic, green pepper, onion, and celery, and sauté for 3 minutes. Add in the sausage and cook for about 5 to 6 minutes until browned.
- Add in the oregano, basil, thyme, tomatoes with their juice, and beans. Bring to a boil. Lower the heat and simmer, uncovered, for 10 minutes.
