Cutting out sugar, fat, and salt can seriously compromise flavor, too. But creating the right blends of spices and herbs will replace the taste. Learning to prepare dry rubs for your favorite seafood, poultry, or meat is a great way to get started. And most grocery stores now carry at least some fresh herbs (though growing your own is a treat). Even desserts will benefit from a well-chosen dash of spice or fragrant leaf. And once you learn the basics, experimenting will take you to new heights of flavor.
